Here's Summer's birthday cake:

LIVER BROWNIES/CAKE

Bake at 325 degrees and line brownie pan with foil. 8x11 pan will work

1 box Jiffy cornmeal muffin mix

2 whole eggs

1 tsp. garlic powder

1 pound chicken livers (or beef)

Blend well in blender or food processor and bake at 325F for 25 - 27 minutes.

Cool and peel off foil.

Cut it up for brownies or leave whole to be a cake.

For the icing I just mixed peanut butter and yogurt and just spread it on the cake and then I sprinkled it with the mini marshmallows and trimmed with raw chicken & duck feet.

Store in the refrigerator. Leftovers can be frozen.

Peanut Butter Delight

1 cup white or whole wheat flour

1 tsp baking soda

1/4 cup peanut butter

1/4 cup vegetable oil

1 cup shredded carrots

1 tsp vanilla

1/3 cup honey

1 egg

Directions:

Preheat oven to 350°F (180°C)

Mix together flour and baking soda. Add remaining ingredients and mix well. Pour into a ring mold sprayed with a nonstick spray for 40 minutes.

Frost this cake with low fat cottage cheese and decorate with carrot pieces. Store in refrigerator.

We used this recipe last year for our rescued chihuahua's "gotcha" day which happened to be Thanksgiving and she LOVED it! We would give her a little piece as a treat every day for almost 2 weeks :) I got it from my friend who used it for her **zu and her golden retrievers for their birthdays. It smelled delicious! Had I not frosted it I probably would have tried it :)
