I'm a little late but our vets around here advise to cook Professor Moro's Carrot Soup. It is actually a recipe for children but works wonderfully on dogs, too.
You just beed carrots and water 1:1 (1 kg carrots, 1 litre water for example) and cook it for at least 1,5 hours. After that mash the carrots and add water until you reach the same amount you had in the beginning. (I always cook little pueces of chicken breast with it for the taste).
Feed in small amounts during the day.

I sometimes take him to work with me. I work in a group home for youths and young adults. He is very much loved there, too.

Yes. He puts more weight on his front legs because he walks with his longer leg's foot a bit like Charlie Chaplin. He gets physio for this every 4 weeks.
He can run pretty fast and effortlessly but walks with a little hobble.

One of his hind legs is shorter than the other. He compensates a lot with his front legs.

Colin screamed the vet office down with what everyone thought was a slipped disc in his neck because he couldn't move his head or neck anymore.... Nope, just a little inflammation in his throat. Didn't even need antibiotics, just honey, joghurt and a snood...

The skin is our biggest organ. It reacts to all kind of stress, positive as well as negative. Your girl has left everything she knew behind and started a life in a strange new world. It is pretty normal for her body react to the stress. Give her time to adjust to her surroundings. If you want to bath her, you can use a shampoo based on oatmeal.
I use brewer's yeast or oatmeal as supplement for my greyhounds' skinn and coat.

She did. Her boy went across the bridge 2 weeks ago.
Their names were Nika and Sami. They were galgos from Spain. Now Nika is alone.

You are on the right path. Saoirse is a courser while Mooney comes from a line of successful racers.
The coursers are mostly bigger but faster and more agile because they hunt the real thing. And mimick the hares flight in their own run.
