I was having ever increasing issues with my newly adopted greyhound with freezes on walks. It got to the point where we were standing still for longer than we were actually walking. It would often happen just because I turned a corner. It felt like he was simply protesting because he wanted to go in the direction he wanted to go, and the more I tried to make him go the way I wanted to go, the more he dug his heels in. I tried the "suitcase" method suggested by @Greyt_dog_lover and it worked like a charm. The first few times, it took a good few steps to get going, but once he got moving again, he trotted along perfectly happily. Now, most of the time when he freezes (which is way less frequent than it was), I just have to touch his collar and say "Let's go!" and he gets moving again. If he sees something really interesting, I will let him stop and check it out for a bit, and then move on. I'm so glad I found this thread :D
